HOLIDAY SHORTBREAD COOKIES: (Kim aka:lakergirl)
These cookies are so delicate & light- wonderful recipe for your Holiday Baking or all year around!
1 cup butter, softened (no substituting)
1/2 cup white sugar
1 tsp pure vanilla
2 cups flour
1/4 cup Corn Starch
Preheat oven 300*. In mixer add butter, sugar & vanilla- mix thoroughly on low/med speed just until smooth.
Gradually add flour & corn starch. Form into 1" balls or use small cookie scoop. Place on ungreased cookie sheets or parchment papered pans. Gently press w/ bottom of glass dipped in sugar to prevent sticking. Bake @ 300 25-30 minutes in center of oven until just lightly browned- cool for 15 minutes & finish off on racks to cool. To finish: dust w/powdered sugar or dip into melted chocolate & crushed nuts on on end of cookie!
NOTE~ the European style shortbread are rolled out onto a floured & sugared board. Pat into a 1/3" rectangle approx 8x11- cut into 2x1" strips. Place 1" apart on parchment paper or un-greased cookie pans- pick with fork Bake as above.
